Okay, so this weekend was a mix of fun and work. Sat am was fun as I went out with the girls for shopping and a celebratory b-day (no, not mine) lunch. I then shopped a wee bit more before going to work and working for a couple hours. We ate at the Black Tomato in the market, which I love. I had a delish seared pepper tuna salad with roasted veggies (including purple peruvian potatoes) and a cheater's glass of pinot noir! I bought a beautiful trench by Graham and Spencer at Trustfund. It's the one pictured below, except that I got a beautiful navy blue coloured one.

Then I went home and baked strawberry scones. They are yummy but a bit plain. Somehow the entire rind of a lemon that I used doesn't come out & I could have used more strawberries for sure.
So, today I went to work and studied for an interview I have coming up. Then I went home and baked some experimental cookies. They are Mocha Oatmeal Carob Chip cookies. I can't have chocolate chips on the diet, and carob is not quite the same, but I thought it could work in a mocha base. I am on a bit of an oatmeal in all baking kick, so I thought I'd try it. I also used vegan margarine, which I find makes things weird and more soft and crumbly. I should have added an extra egg to combat the softness of the margarine, but I forgot. So, they tast great but the soft dough base is too crumbly for my liking.
Still, a fun and yum filled weekend over all.
