For dinner, I mean. Today was mum's birthday, and I had gotten her a fab gift (well, as far as she is concerned): K.D. Lang tickets. Unfortunately, K.D. isn't here 'til the end of May, and mum's bday is today. So, to celebrate in some sort of fashion, I decided to cook a great meal.
I made pesto stuffed prosciutto wrapped chicken accompanied by parsley-pea risotto.
I had a bottle of poully-fuisse (what do you know, turns out it's one of her faves!), and a green salad with homemade mustard-champagne vinigrette. Oh, we also had some prosciutto wrapped melon for an appetizer.
To finish was the piece-de-resistance: fresh homemade meringue tarts filled with strawberries and whipped cream and topped with more strawberries and whipped cream. Ahhh! Taste bud heaven.
A nice spring meal for a nice spring like day (yes, we doffed our jackets this aft here in the 'Wa - woohoo!). Cheers.

Looks very yummy! Except for the parsely bit!
I ask again, why are we living on opposite corners of a 3000 km wide country?
