Springtime Semi Fredo

A quick post on my green tea & honey semi fredo. I made it when I had too much green tea mixture left over from the St. Patrick's day cupcakes. I love a good semi fredo. Easy to make, always tasty and you don't have to make too much if you don't wanna. What could be better. It all started with a Jamie Oliver recipe for honey fig in a vanilla bean base, and took off. So, I made green tea & honey with a strong dose of the tahitian vanilla. The flavour's are well balanced, and the vanilla made a big difference - the floral notes really shine through. I used enough matcha powder to make it a beautiful green colour too!

So happy am I. Now that I renewed my love of semi fredo, I have been thinking of other recipes. Like adzuki bean. Or a vanilla honey one, to make patbingsu with this summer. I found a recipe for fruit jellies, and was trying to come up with how to get the patbingsu shaved ice. I could make the semi freddo, red bean sauce, jellies, and mochi (dduk) all by hand. How fabulous would that be?!!

Okay, I am over spring already - onto summer!
