I can't make it stop: More Cupcakes!

I just finished baking & sampling the base of my cupcakes for the Key Lime Pie cupcakes. Gawd, they are good! I chickened out of a no flour only Graham crumbs recipe for fear that they would stick to the side of the cupcake paper. Good call, as I believe it might have happened. Instead, I used the graham cracker cupcake from Vanilla Garlic and put in an extra 2&1/2 tsp ginger, and 1/2 tsp more baking powder. Yummy, light, moist graham flavour cakes. So, so very yum. Next time though, I will use brown sugar to golden up the taste even more..and more ginger, and maybe a hint of nutmeg.

I bought a big icing kit (as in oversized tips) and tried out the cupcakes with a bit of icing that was impromptu and delish. I started with a small amount of butter and 3 times the same of cream cheese. I grated lime zest in (to your own taste - I like a good amount). Beat with mixer 'til creamy. Then I added whipping cream and beat til starting to soft peak. Then I added lime juice and icing sugar (a nice tablespoon full at a time) -and kept adding the two until the flavour was right, and then kept adding the icing sugar 'til the texture and sweetness was right. It was awesome: light, with a bit of sour, and a subtle sweet tang. I plan to use a mascarpone version to finish the non-sample cupcakes off tomorrow - and they will also be filled with key lime filling.

I have no camera yet, so no pics. Sorry. Check back later!
