I am going to the cottage tomorrow and won't have time to cook a lunch for Tuesday, so I've been cooking and baking up a storm today. All diet friendly recipes, and all new.
First, I started the morning off right with some Wheatless Orange Oatmeal Muffins. I found the recipe online and then tweaked it for more flavour and healthfulness. I added extra flaxseed, an egg (since I am allowed eggs), oat bran, ginger and cardamon for flavour, reduced the amount of oil by a tablespoon or two, and swapped some of the honey for more molasses. The resulting muffin was super super yummy. These are on the bake regularly list. They are light enough but still rich and oaty, and the cardamon is fully present with a hint of orange. Scrumptious!
Next, I decided to make some dips, etc., for tortilla chips for the cottage. I first made a black bean dip with the left overs from the brownie batch (I had only made half the recipe, as I was not so sure if they'd turn out with the substitutions). So, I made spicy black bean dip and left it a little rough because I love a bit of bean texture.
Next, I made a spice mango salsa with jalepeno, cilantro, and a hint of mint. Lovely!! I am having some with salmon tonight because I just can't wait.
I also made a curried brown rice & apple salad which I may post a snap of tomorrow with the guacamole I am finishing tomorrow morning. I made it mainly for lunch purposes, but it looks super good - for now you'll have to use your imagination!
Productive, no?

Hi Moddy,
Glad you liked the muffins. Your addition of cardamom sounds like a great idea to me!
Wow! Nicely done. That mango salsa looks *awesome*.
Now I think I want to go cook something tonight. (I've been meaning to figure out a good way to do jerk tofu. Perhaps tonight is the night!)
