Vietnamese Feast!

So, tonight I wanted to take some time and make something a little different that would fit in the new diet. I decided to cook something inspired from Vietnam. I love asian cuisine of all kinds, and thought to myself, "Hey, what's a country you don't know how to cook much from?" And there you have it (or, at least, I had it).

I do love a rice paper roll, and have always wanted to try making them. So, I did. They are easy and super fun. Next time I am gong to do something more than a simple traditional veggie one. I am thinking: Indian fusion rolls, or, maybe, Korean fusion rolls. The sauce is just plain peanut butter with peanut oil and some Korean fine ground red pepper thrown in. The real sauce should be a spicy sweet thing, but oh well. I did put mint, cilantro, and a bit of lime in the roll, so the bulk of the flavour was already inside.

Clearly woman cannot live by rice paper rolls alone (or, she doesn't really want to try it), so I decided on a protein based dish to accompany them. I hadn't had chicken all week so I picked that as my protein, and a quick googling later and I had a recipe for Spicy Cashew Chicken. OMG, this is so good. I can only imagine what the real recipe tastes like. The sauce is suposed to contain soy sauce, sugar, and oyster sauce - all of which I can't have, so I substituted honey, Bragg's liquid aminos (like an unfermented soy sauce, but not quite the same flavour) and I threw in some ginger into the recipe to cover up for my lack of oyster sauce and inability to think of what to sub for it.

It was all quite tasty.
