Loverly Weekend!!

It was beautiful in the Capital this weekend (though, of course, it's going to rain like the dickens tomorrow - go figure). The timing for such great sunshiny warm weather was perfect for the annual Great Glebe Garage sale. I was out from 745am to 130pm hanging around with work-gang members wandering hither and yon around the Glebe. My total accumulation of sale stuff: 2 books - which I didn't even pay for as a friend gave them to me with the promise I'd buy her coffee. Rock on!

I was also a hero in that I found the missing sunhat of a friend's wee one who'd taken it off and tossed it on the busy sidewalk while we weren't looking. Why do all small children (like 3 years and under) hate HATE their hats? Someone should design a hat little ones love (and keep on), it would make millions.

I spent some time Sunday baking (per new usual). This week: Sweet Potato Carrot muffins that taste very much like a carrot cake (not a rich one though, just a yummy one). The lesson learned: if using more grains then the recipe calls for, bump up the spices. The batch could be spicier, but with such health things as whole oats, pecans, carrots, sweet potato, oat bran, raisins, honey, molasses, and pureed prunes they are still quite yummy. I forgot to add flaxseed though. Oops!

The big sweet of the week? Homemade gingerbread. I used the one from 101 Cookbooks. I lost my loaf pan, so they are brownie shaped, but yummy. Spelt flour, soy milk, and honey and molasses tweaked the recipe. I boosted the flavour (doubled the spices and added 2 extra tablespoons of real ginger), but with this recipe a word of warning: you can undercook it even if it looks done. I was okay, it is super moist and a bit spongy, but I actually would like a little less moisture on the bottom, so I'd cook mine just 5 minutes or so longer the next time. The flavour was quite good!

Yum!

Tomorrow night: Korean stirfry!

The carrot/sweet potato sounds yummy! Must share the recipe with me. I've been meaning to make a carrot cake but this sounds better.

I made pumpkin-cornbread. It has a sweet and spicy thing going on!

Also made granola, although overbaked a bit and added too much oats, but I have yet to post a pic.
